Tabasco is hot. Created in 1868 by Edmund McIlhenny, the popular pepper sauce is still made at the original site by McIlhenny Company on Avery Island, Louisiana. In fact, Tabasco actually created the pepper-sauce industry, and it remains a leader in its production and sale to this day. The sauce is distributed to foodservice clients (bars and restaurants) and food retailers in 160 countries. With a 600,000 bottle-a-day capacity Tabasco is labeled in more than 20 languages and dialects. McIlhenny also co-brands and produces other products such as pepper jelly, soy sauce, steak sauces, alcoholic beverages, and, not for the faint of heart, Tabasco lollipops.
